Fermenting Beer in Carboys

I brewed once in January and 3 times so far in February  with back to back brew days yesterday. It’s nice to have the kegerator full of kegs and these beers fermenting away. I probably have half of my Chimay and Belgian wit beers left. The Berliner weisse is about 20% gone and I drink a little bit of it every other day. Having something sour on tap helps me get my fix from opening Lambic.

Fermenting:

  • Boulevard Saison Brett Clone
  • Surly Furious Clone
  • Low ABV Brett Saison with Blueberries
  • Galaxy / Citra 8% Double IPA with a bit of Simcoe thrown in for good reason.

I don’t plan on touching these until I’m back from Europe. Hpefully, some of my kegs start drying up at that time. I still have that damn keg of Stout sitting down here. I wish I could fast forward to July and tap this thing. It’s going to be delicious.
