375ML Bottle split 2 ways. Held upright for 4 weeks before opening and enjoyed at fridge temp. Enjoyed in Hill’s stemware.

A – Gorgeous straw pale with a lot of little tiny bubbles. However, pours with just a faint head that fades quickly to almost nothing. When it did have carb, it was a pillow-like solid white bubble fest.

S – Smells fantastic, Lemon tea, lemon meringue, lime, hay, fresh cut grass, some pumpernickel pear and a bit of red-apple (sorry I don’t know the varietals).

T – Has a lot of arctic saison in it. Juicy, lots of lemonade, honey, pear, even peaches. A very small pepper note as it finishes. Tart, minor acidity. Certainly has an apple underlying essence but the yeast and grain just do so much.

M – The carb in mouthfeel is spot on. Tingly, full, crisp and very clean finish with a lingering brett funk with some leathery notes

O – Fantastic. When Shaun and Gabe get together, magic happens. This is great.
