★ Cellaring: Updated Beer Cellar, February 2015

I finally got around to snapping a few photos and for the most recent cellar-shots, I grabbed a dirt cheap fisheye lens from Olympus. I’ve started the process of moving beers off-site. A friend about 15 miles from here has a farmhouse built in the 1850s with a rock basement, dirt floors and zero flooding with decent humidity. It keeps 45-55 year-round and is pitch black so I have a palette on the floor with lambic boxes for bottles I don’t plan on opening for 5-10 years. I’ll continue moving things off-site this year of pretty much any beers I buy in Belgium (2 trips planned with stopovers in France, Denmark and Sweden).

The fisheye lens came in handy for the shots of my sour-room where the temp keeps @ 50F and the door is locked and it’s quite insulated. The rest of my basement is 55-65 depending on the time of year.

I always get people who meet me in public mentioning two things. That I drink a lot of Hill Farmstead and I have a lot of beers in the cellar. Both are true so here are the once a year cellar photos:

Ice Cider, Mead, BCS, Bruery and smaller format HF beers. Bottom shelf is 2 spontaneous home-brew + a lot of champagne.

Bourbon shelf is full with 3 bottles of Genever from Holland. Then HF BA saisons, misc AWAs. 3rd shelf is my daily drinking shelf of HF saisons that are all 2 case limits. bottom shelf is mostly beers I’m aging from De Dolle, Struise and Alesmith with a few bombers of Firestone Walker beers

375ML Lambic and fruit lambics w/ vintages of paper or neck.

Finally, Gueuze, nicer bottles, magnums and glassware with 2 BCS 2013 kegs. Still ISO a barleywine or coffee keg. My 2012 BCS coffee keg has almost kicked. Not much left in there. I also have a case each of 2014, 2013 BCS + 2013 BCS Barleywine that I keep in here.

Each room / cabinet has a separate lock but basement is locked. Pretty secure since I have roommates now that can access the area.
