After a day of pouring Casey beers yesterday at Hill Farmstead, I had to open this one up. Bottled in July of 2015, acquired in a trade last Fall, sat upright in the fridge for about 6 months and still the yeast was settled but not very solid, started moving around as soon as I moved the bottle.
A – Good cork pop but not vibrant. Formed a 2 finger solid white creamy head on the pour then faded fast. It’s a gorgeous blood-red appearance, nice translucency.
S – Has a tinge of fecal aroma, tree-bark earthy aroma with a sharp acidity.
T – Cherry throughout, like holding nothing back cherry. Has a candy syrup flavor from how sweet it is. There is some vinegar here, fecally sulphur flavors, loads of earthy funk and a good lemon zest and lime juice flavor as well. There really is a ton of cherry in this beer but the flavor is a far departure from cherry lambic but could be related similarly to Cherry Flora from HF.
M – Good mouthfeel, thin, juicy, low carb
O – Nice balanced beer for sure. I wish it was slightly less acidic but I do get what Troy was going for here.
