A – Poured with half a finger solid white head that faded fast to nothing. Looks very soft and still in the glass. Burgundy purple/red appearance, murky and very “raw” in appearance.
S – I get the scent from 2 feet away. Up front tart and funky scent. Lots of weird characteristics that were unexpected. Sort of rubbery and heavy birch wood scent. Hints of berries and rotten grapes.
T – Wow. This is delicious. Of course, there’s this funky tart bitter-sweet taste up front. it’s followed by this astringent grape skin sort of tannins dryness. Hint of very standard grocery store grape fruit juice taste. Hint of lemon juice and this heavy oak / birch finish. Worth mentioning too that it’s less fruity than expected and slightly too much acidity and I wasn’t expecting that much from a Cantillon.
M – 40% carbonation on my mouth swish. Medium body (surprising for a Fruit Lambic) and a puckering dry finish.
O – As usual, the cork comes out of the bottle after uncapping. It’s more grape like than expected but a solid lambic. When i was in Belgium, I bought the most of this beer and I’m glad I did. It’s very enjoyable and worth sipping on.
