UPDATED: JUL 16, 2012 On Tap at Hill Farmstead Tap Takeover at Positive Pie in Plainfield. 

A – Huge carbonation of 4-finger head with a leather appearance. The beer is dark brown to black. Clarity is pretty great. 

S – There’s this really pleasant farmhouse funkiness on the nose. Brettanomyces? I get a hint of Raspberries as well. Very sweet and tart. 

T – Lots of tart characters but a solid nutty malty finish. Smoked malts are pretty up front. Very tart as the malts fade. Funky and wild for sure. There is a underlying white wine taste that has me excited. 

M – Swishing in my mouth, I only get 10% re-carbonation. Very light body with a nice tart malty finish. 

O – I’m VERY happy I tried this before the release this weekend on tap. I was not sure if I’d get all 4 bottles for myself but now I am. This beer is PHENOMENAL and it’s only going to get better. 

UPDATE: Bottled Version 

Appearance is more carbonated so therefore a 4-finger head, overflowing bottle of carbonation even though it’s sat in the fridge for 3 days and gorgeous head lacing. Beer itself is the same. 

Smell is unchanged except I get more lemons on the nose. 

Taste is the same except more tart, more sweet and less nutty than the draft version. Very tart and far more closer to a wild beer than a saison 

Huge difference in carbonation on the mouth feel. Getting 80% carbonation on the mouth swish versus on tap. No malts on the finish but there is toffee 

Overall, this beer is greatly improved in bottle form. I can’t wait to see how this ages. Glad I have 3 more of them. Increasing my rating from 4.5 to 4.7.
