UPDATED: JUL 16, 2012<\/small>\u00a0On Tap at Hill Farmstead Tap Takeover at Positive Pie in Plainfield.\u00a0<\/p>\n

A – Huge carbonation of 4-finger head with a leather appearance. The beer is dark brown to black. Clarity is pretty great.\u00a0<\/p>\n

S – There\u2019s this really pleasant farmhouse funkiness on the nose. Brettanomyces? I get a hint of Raspberries as well. Very sweet and tart.\u00a0<\/p>\n

T – Lots of tart characters but a solid nutty malty finish. Smoked malts are pretty up front. Very tart as the malts fade. Funky and wild for sure. There is a underlying white wine taste that has me excited.\u00a0<\/p>\n

M – Swishing in my mouth, I only get 10% re-carbonation. Very light body with a nice tart malty finish.\u00a0<\/p>\n

O – I\u2019m VERY happy I tried this before the release this weekend on tap. I was not sure if I\u2019d get all 4 bottles for myself but now I am. This beer is PHENOMENAL and it\u2019s only going to get better.\u00a0<\/p>\n

UPDATE: Bottled Version\u00a0<\/p>\n

Appearance is more carbonated so therefore a 4-finger head, overflowing bottle of carbonation even though it\u2019s sat in the fridge for 3 days and gorgeous head lacing. Beer itself is the same.\u00a0<\/p>\n

Smell is unchanged except I get more lemons on the nose.\u00a0<\/p>\n

Taste is the same except more tart, more sweet and less nutty than the draft version. Very tart and far more closer to a wild beer than a saison\u00a0<\/p>\n

Huge difference in carbonation on the mouth feel. Getting 80% carbonation on the mouth swish versus on tap. No malts on the finish but there is toffee\u00a0<\/p>\n

Overall, this beer is greatly improved in bottle form. I can\u2019t wait to see how this ages. Glad I have 3 more of them. Increasing my rating from 4.5 to 4.7.<\/p><\/div>\n
